lemon cream with blackberries

1 teaspoon lemon zest
1/4 fresh lemon juice
1/2 cup honey or agave
1 12 oz package silken tofu
Blackberries

Puree all ingredients in a blender, except a little zest and the blackberries to top it with! I have NEVER done anything with tofu before.....this was a really fun to try! And it tastes creamy and good without the cream!

homemade breakfast bars!

1/4 cup applesauce
1 1/4 cup oats
1/4 cup flax seed
1/4 cup chopped pecans
2 tablespoon chopped pistachios
1/4 teaspoon salt
1/2 cup honey
1/4 natural peanut butter
1/2 teaspoon vanilla extract

Preheat oven 325 and prepare an 8-by-8 pan. Combine dry ingredients and set aside. In a sauce pan combine everything else until melted together. Add the dry ingredients and transfer to the prepared pan. Bake for 20 minutes. Wait until completely cool to cut:) enjoy!!!

berry pizza

So I thought I'd share my new favorite healthy snack, it's really easy and yummy. You toast a whole wheat tortilla spread a thin layer of low fat 1% riccota cheese and place the berries to your liking:) the original recipe called for a thin layer of jam too...I am trying to limit the sugar in our diet so I left that out and it is still so yummy:)

what I learned this past week...

So I went grocery shopping. I took note of what people were buying what kind of food. It was very interesting to see the size of people buying healthy food and the size of those people buying not so healthy food. There really is a direct correlation! I also discovered the bulk area at winco. I was so happy! You decide how much you need, so nice to not have to over buy! So exciting when you only have two people to cook for and you only need a small amount. Everything was also really cheap by the pound! So much better! I was able to get just what I needed for our meals this week. I also went to Sam's club and bought our fruit in bulk, that was cheaper too! We got all sorts of berries! Overall we only spent 70 dollars and our meals are going to be so nice and healthy. I am very Proud:) I have been trying to do my best to follow the word of wisdom as I loose weight, when I did that on my mission I was able to loose what I wanted to. Its amazing to me how the Gospel can be applied in ALL aspects of life:) happy Monday everyone!
